yummy treats

This is for my friend, Jen S, who is pregnant with a UBER-cute baby boy that is due this winter!  Yay!! :0)

Apple Crisp (what I made this afternoon)

Crumb the following in a bowl:                                                            

1C flour (I used 1/2 White & 1/2 WW)                                                   
1 C packed Brown Sugar                                                                       
3/4 C oatmeal (I like the old fashioned)                                              
1 tsp. cinnamon                                                                                       
1/2 C butter

Mix in a saucepan:

2 Tbsp cornstarch
1 C sugar
1 C water
1 tsp vanilla

Press 1/2 crumb mixture into a square pan (8x8).  In saucepan mix all ingredients listed above until it is thick & clear.  Chop 4 C apples and place on top of crumb mix in pan.  Pour sauce mix over top.  Add the other 1/2 of the crumb mix on top.  Bake 350 degree for 1 hour.  I like to serve this with ice cream or fresh whipped cream.

Today, I added 1 C of blueberries, just because.
You can also easily double this recipe for a 9x13 pan.


Apple Crunch (My MIL's recipe)

Crumb in bowl with a pastry blender or fork:

1 C flour
1 C brown sugar
1/2 C shortening

In a 9x13 pan, place sliced apples at least 1 inch deep.  Spread topping over and bake 350 degrees for about 30 minutes or until apples are tender.

This one is Dayv's favorite.  It is easier than the first one, but ya know sometimes I like the oatmeal-ly (is that a word?) topping.
